Looks good… Little suggestion… instead of pork loin (which is expensive and very little fat) use pork butt, also try adding lardons to the “meatloaf’ mixture… lardons are pretty much just pork fat, when you add it to your mixture they will dissolve creating a much juicer meatloaf. Then the internal temperature only needs to reach 160 for it to be completely safe to eat, this will also help it from drying out… All and all it looks good, nice job

good luck jef – but i need to taste more of your cooking
